STUDY OF WATER ACTIVITY OF APPLE VARIETIES OF THE KYRGYZ AND FOREIGN BREEDING WHEN STORED IN THE CONDITIONS OF OSH REGION

Abstract

The subject of the study was apple varieties: Kyrgyz winter, Jonathan, Renet Simirenko, Golden Delicious, Aport Alexander, Crimean winter, Stark, Delicious and Starkrimson. Purpose of the work: study of water activity (aw) of 9 varieties of apples of Kyrgyz and foreign selection in 2019-2020 harvest years. Research methods: the study of water activity was carried out on the instrument of the Novosina LabSwift-aw system in the laboratory of the Department of Agricultural Products Processing Technology, OshTU.The research results showed that aw during harvesting of apples of Kyrgyz and foreign varieties of different ripening periods was in the range from 0.720 to 0.952 and the use of the indicator of "water activity" as a criterion is not enough to determine the shelf life of apples in the conditions of Osh oblast.
